Parm Style Mushroom

This mushroom meat replacement is for those have severe alpha gal syndrome like me and cannot have most meats because of by products for preservatives that are in most store bought meats including fish. This mushroom dish has become one of my favorites, allowing me to add more protein to my diet and fiber! This mushroom meat replacement pairs well with a pasta dish like I have in the picture above or with mashed potatoes and a vegetable of choice.

This meat replacement is: vegan, gluten free, egg free, and alpha-gal safe! 

 ****Warning: Mast cell activation syndrome can sometimes be reactive to mushrooms so please take care when choosing your mushrooms and make sure that you're not already allergic to mushrooms themselves before trying this recipe.****

Ingredients:

use as much or little of the seasoning to taste

  1. Fresh Oyster Mushrooms

  2. Coconut oil

  3. Oat flour

  4. parsley

  5. Oregano

  6. sage

After purchasing or harvesting your mushrooms you want to clean them brush them off try not to put them in water if it can be avoided to be cleaned. We don't want to add extra moisture when we're about to put it in the pan to press and cook the moisture out of the mushroom. Once it's clean and you have the substrate cut off of the base of the mushroom you want to break apart your large mushroom into smaller more manageable pieces. You can have a cluster together or if your mushrooms are very large individually you can take them off and press them individually. I like to press them in clusters it makes them more meaty and has a better flavor. Next step is going to be pressing your mushrooms in a medium high heat to medium low depending on your stove. Once you have your mushroom in your pan you're going to use a burger press that's like in my picture or you can use a spatula whatever you have available to you. You're going to want it to be golden brown on both sides and continue the process till all the mushrooms are Pressed and browned on both sides. Next you're going to get your oat flour your seasonings and put them together you're going to dampen your mushrooms slightly and cover them in the oat flour Seasoning. Add enough olive oil to fry your mushrooms each time flip them and cook thoroughly until the oat flour coating is brown. Once all are done plate and enjoy with your sides of choice
